You can use pumpkin or squash for this recipe and any kind of pasta, but short pasta like orecchiette, penne, or rigatoni works better.Ingredients | Bell Pepper Cream Cheese Sandwich Calories¼ cup butter, divided1 onion, minced1 pound sugar pumpkin - peeled, seeded, and cut into small cubes½ pound orecchiette pasta2 orange bell peppers, seeded and diced1 cup heavy cream4 tablespoons Parmesan cheesesalt and freshly ground black pepper to tasteDirectionsMelt 1/2 the butter in a large skillet over medium-low heat and cook onion until soft and translucent, about 5 minutes.
