Tasty, quick, simple, and easy to cook vegan stir-fry.Ingredients | Beef Fried Rice Noodles½ (8 ounce) package dried soba noodles1 tablespoon oil, or as needed¼ cup onion2 cloves garlic, finely chopped1 cup assorted mushrooms¼ cup chopped eggplant6 leaves bok choy, chopped2 tablespoons soy sauce1 teaspoon teriyaki sauceground black pepper to taste1 teaspoon sesame oil1 green onion, finely choppedDirectionsBring a large pot of lightly salted water to a boil. Cook soba in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 5 to 6 minutes. Drain.Heat oil in a large skillet over medium heat. Add onion and garlic and stir-fry for 1 minute. Toss in mushrooms and eggplant; cook for 2 minutes more. Add cooked soba noodles, bok choy, soy sauce, teriyaki sauce, and pepper.
