This popular Russian salad is often served for special occasions. I like to garnish the salad with pineapple rings, but you can use any kind of canned pineapple.

Ingredients | Russian Sharlotka Cake

1 (10 ounce) can pineapple slices, drained and chopped (reserve a few slices for garnish)

½ pound skinless smoked chicken breast, cubed

1 cup grated mature Cheddar cheese

¾ cup chopped walnuts

2 tablespoons sour cream

2 tablespoons mayonnaise

2 cloves garlic, minced (Optional)

salt and freshly ground black pepper to taste

Directions

Combine cubed pineapple, chicken breast, Cheddar cheese, walnuts, sour cream, mayonnaise, and garlic in a bowl and mix well. Season with salt and pepper. Spoon into a serving bowl and garnish with remaining pineapple rings.

You can also use yogurt instead of sour cream.
