It's been a long time that i posted a recipe with cauliflower rice, this time i wanted something more flavorful.

This curried fried rice is a meal in itself! The flavors are exotic and wonderful and this dish is really filling.Ingredients | Curry Cauliflower Fried Rice4 tablespoons vegetable oil2 medium zucchini, diced1 medium carrot, peeled and minced1 small onion, minced1 stalk celery, minced½ medium red bell pepper, minced½ medium jalapeno pepper, seeded and minced¼ cup slivered almonds2 tablespoons soy sauce, or more to taste1 ½ cups cooked rice2 cloves garlic, or more to taste, minced1 tablespoon minced fresh ginger1 tablespoon yellow curry powder1 tablespoon dried basil1 teaspoon ground turmeric1 teaspoon ground black pepper½ teaspoon ground coriander½ teaspoon crushed red peppersalt to taste1 tablespoon salted butterDirectionsHeat oil in a large skillet or wok over medium-high heat. Add zucchini, carrot, onion, celery, bell pepper, and jalapeno pepper. Stir in almonds and saute until zucchini is slightly soft, about 5 minutes.Add 1 tablespoon soy sauce and saute for a few seconds. Add cooked rice, garlic, remaining soy sauce, ginger, curry powder, basil, turmeric, black pepper, coriander, crushed red pepper, and salt. Saute until rice is heated through and takes on a nice toasty texture, about 5 minutes.Remove from the heat and stir in butter until combined. Cover and let sit for about 3 minutes before serving.If you want a spicier version, add more crushed red pepper or serve with Sriracha sauce. You can also scramble an egg into this for an even more authentic flavor.This is a vegetarian version, but you can easily add diced cooked chicken or browned ground turkey for a rich, meaty version.
