Recipe Summary Chef John's Tomato Sauce
This is one of my most requested food wishes, my all-purpose basic tomato sauce. Whenever I make a meat sauce, this is my base. You can only stir this with a wooden spoon, otherwise it's bad luck.Ingredients | Vegan Tomato Sauce Recipe¼ cup olive oil1 onion, finely diced1 rib celery, finely diced1 pinch salt4 cloves garlic, minced2 (28 ounce) cans whole peeled San Marzano tomatoes2 teaspoons white sugar1 teaspoon salt1 teaspoon anchovy paste1 teaspoon white wine vinegar½ teaspoon dried Italian herbs1 pinch red pepper flakes1 tablespoon tomato paste2 tablespoons chopped Italian flat-leaf parsleywater, or as neededDirectionsPlace olive oil, onion, celery, and a pinch of salt into a large heavy saucepan or Dutch oven over medium-low heat.
